Sugarcoat, a food trailer selling vegan treats, will hit the streets of downtown Las Vegas this fall. The project, the brainchild of 14 University of Iowa students and faculty member David Gould, grew out of coffee shops and restaurants, Saturday night brainstorming sessions and weekend road trips. It "pushed the envelope of what a college class could look like."
